Italian Desserts Recipes - Chocolate and Nut Roll (Rolle di Cioccolato e Noci) Recipe

Ingredients                                 

  • 225 g/8 oz short crust pastry (basic pie crust)

  • 175 g/6 oz plain (semi-sweet) chocolate

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 30 ml/2 tbsp clear honey

  • 15 ml/1 tbsp brandy

  • 225 g/8 oz/2 cups chopped almonds

  • 45 ml/3 tbsp ground almonds Butter, for greasing

  • Icing (confectioners') sugar (optional)


Method:

  1. Roll out the pastry to ,a rectangular shape. Place the chocolate and butter in a bowl over a saucepan of hot water.

  2. Heat until the chocolate has melted. Stir in the honey and brandy.

  3. Brush over the pastry until the chocolate has been used completely. Sprinkle over the chopped and ground almonds.

  4. Roll up and place on a greased baking sheet. Bake in a preheated oven at 180C/350F/gas mark 4 for 20-25 minutes.

  5. Cut in slices and dust with icing sugar if liked. Serve hot or cold.
