Christina's Sweet
Snack (Le Castagnole di Cristina) Recipe
Ingredients

2 eggs, beaten
-
75 ml/5 tbsp
milk
-
90 ml/6 tbsp
caster (superfine) sugar
-
10 ml/2 tsp
baking powder
-
5 ml/1 tsp vanilla essence
(extract)
-
Grated rind and juice of 1
lime
-
90 ml/6 tbsp oil
-
90 ml/6 tbsp plain
(all-purpose) flour, sifted

Oil for deep-frying

60 ml/4 tbsp icing
(confectioners') sugar, sifted
-
10 ml/2 tsp finely grated
nutmeg
Method:

Beat the eggs, milk, sugar, baking powder,
vanilla essence and lime rind and juice
together.

Add the oil and slowly stir in the flour. Dip a
dessertspoon into cold water and scoop up a
spoonful of the dough.

Drop carefully into hot oil and deep-fry for 1-2
minutes until puffed up and golden brown.

Lift from the oil with a draining spoon and
drain on kitchen paper.

Mix the icing sugar and nutmeg together and dust
over the sweet fritters. Serve hot or cold.
