Italian Desserts Recipes - Christina's Sweet Snack (Le Castagnole di Cristina) Recipe

Ingredients                                 

  • 2 eggs, beaten

  • 75 ml/5 tbsp milk

  • 90 ml/6 tbsp caster (superfine) sugar

  • 10 ml/2 tsp baking powder

  • 5 ml/1 tsp vanilla essence (extract)

  • Grated rind and juice of 1 lime

  • 90 ml/6 tbsp oil

  • 90 ml/6 tbsp plain (all-purpose) flour, sifted

  • Oil for deep-frying

  • 60 ml/4 tbsp icing (confectioners') sugar, sifted

  • 10 ml/2 tsp finely grated nutmeg


Method:

  1. Beat the eggs, milk, sugar, baking powder, vanilla essence and lime rind and juice together.

  2. Add the oil and slowly stir in the flour. Dip a dessertspoon into cold water and scoop up a spoonful of the dough.

  3. Drop carefully into hot oil and deep-fry for 1-2 minutes until puffed up and golden brown.

  4. Lift from the oil with a draining spoon and drain on kitchen paper.

  5. Mix the icing sugar and nutmeg together and dust over the sweet fritters. Serve hot or cold.
