Italian Desserts Recipes - Citrus Meringue Pie (Pasticcio agli Agrume) Recipe

Ingredients                               

  • 250 ml/8 fl oz/1 cup milk

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 2 eggs, separated

  • Grated rind and juice of 1 lemon or large lime

  • 150 g/5 oz/2/3 cup caster (superfine) Sugar

  • 2.5 m/1/2 tsp salt

  • 20 cm/8 in baked pastry case (pie shell)


Method:

  1. Blend the milk and corn flour together in a saucepan. Gently cook until thickened, stirring constantly.

  2. Mix the remaining ingredients, except the egg whites and 60 ml/4 tbsp of the sugar, and stir into the thickened milk.

  3. Cook until thickened, stirring constantly. Cool the custard and put into the baked pastry case.

  4. Whisk the egg whites until stiff, adding the remaining sugar a little at a time. Spoon the meringue mixture over the citrus custard.

  5. Bake in a preheated oven at 150°C/300°F/gas mark 2 for about 15-20 minutes until crisp and just turning color.
