Ingredients

100 g/4 oz/1/2 cup
granulated sugar

15 ml/1 tbsp water
-
4 eggs
-
40 g/3 tbsp light brown
sugar
-
Vanilla essence (extract)

150 ml/2/3 cup milk
-
300 ml/1 1/4 cups single
(light) cream
Method:

Heat the sugar in a
saucepan; the sugar will darken as it melts.
Stir and continue to cook until it becomes a
dark liquid syrup.

Remove the pan from the heat,
carefully add the water and stir until dissolved
(be careful, it will splutter). Pour the syrup
into a basin or mould (mold).

Whisk together the
eggs, brown sugar and vanilla essence. Heat the
milk and cream in a saucepan. When nearly
boiling remove from the heat and pour over the
egg mixture.

Whisk together until blended.
Strain into the basin over the syrup. Place the
basin in a roasting tin (pan) half-full of
water.

Cook in a preheated oven at
150°C/300°F/gas mark 2 for 1 hour or until set. Remove
from the oven and allow to cool. Chill for at
least 2 hours, then turn out and serve.
