Ingredients

6 fresh figs, chopped
-
30 ml/2 tbsp clear honey
-
15 ml/1 tbsp lemon juice
-
225 g/8 oz/2 cups whole
meal flour

225 g/8 oz/2 cups rolled
oats
-
225 g/8 oz/1 cup unsalted
(sweet) butter
-
75 g/3 oz/1/3 cup light
brown sugar
Method:

Place the figs, honey and lemon juice in a
saucepan and simmer over a low heat for 5
minutes. Allow to cool slightly.

Mix the flour and oats together in a bowl and
rub in the butter and sugar.

Press half of the mixture into a shallow greased
20 cm/8 in square tin (pan).
-
Spread the fig mixture on top and cover with the
remaining flour mixture.
-
Press down firmly and bake in a preheated oven
at 180°C/350°F/gas mark 4 for 30 minutes until
golden brown.

Cut into slices while still warm but leave to
cool in the tin before serving.
