Italian Desserts Recipes - Figs Preserve (Conserva di Fichi) Recipe

Ingredients                                 

  • 450 g/1lb/3 cups blanched almonds, toasted

  • 750 g/3 cups granulated sugar

  • 175 ml/3/4 cup water

  • 15 ml/1 tbsp grated lemon rind

  • 1.5 kg/3 lb fresh figs, sliced

  • 1/2 lemon, sliced

  • 120 ml/1/2 cup Cognac

  • Milk Sponge Cake and cream, to serve


Method:

  1. Combine the sugar, water and lemon rind in a large saucepan and cook over a low heat for 5 minutes.

  2. Add the figs and lemon slices and simmer for 20 minutes. Allow to stand, covered, overnight.

  3. Bring the mixture to simmering the following day and cook for 20 minutes, until it thickens.

  4. Add the nuts and Cognac. Cook for 1 minute and pour into the sterilized jars and seal. This preserve may be eaten right away or stored for future use.

  5. Serve spooned on Milk Sponge Cake, topped with cream, or spread on Ciabatta bread for a snack.
