Italian Desserts Recipes - Flaming Peach Pie (Pasticcio di Pesche alla Fiamma) Recipe

Ingredients                                     

  • 100 g/4 oz/1 cup plain (all-purpose) flour, sifted

  • 23 cm/9 in unbaked pastry case (pie shell)

  • 3 fresh peaches, stoned (pitted)

  • 50 g/2 oz/1/4 cup light brown sugar

  • 50 g/2 oz/1/3 cup unsalted (sweet) butter, softened

  • 2.5 ml/1/2 tsp grated nutmeg

  • 45 ml/3 tbsp brandy


Method:

  1. Sprinkle 5 ml/1 tsp of flour over the pastry case. Slice the peaches and layer them in the pastry case.

  2. Blend the sugar, the remaining flour, butter and nutmeg.

  3. Sprinkle over the peaches, leaving 2.5 cm/1 in of the outside edge uncovered.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 25 minutes until the pastry and topping are crisp.

  5. Heat the brandy, ignite and pour over the fruit. Serve immediately.
