Italian Desserts Recipes - Frangipane and Strawberry Pie (Pasticcio di Mandorle) Recipe

Ingredients                                 

  • Butter for greasing

  • 225 g/8 oz short crust pastry (basic pie crust)

  • 45 ml/3 tbsp strawberry jam

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 2 eggs, lightly beaten

  • 15 ml/1 tbsp rum

  • 100 g/4 oz/1 1/4 cups ground almonds


Method:

  1. Grease a 20 cm/8 in flan tin (pan) with the butter and set aside. Roll out the pastry on a lightly floured board and line the flan tin.

  2. Spread the base of the pastry with the strawberry jam. Beat the butter with the sugar until pale and fluffy.

  3. Beat in the eggs and rum. Stir in the ground almonds and spoon the mixture into the pastry case.

  4. Bake in a preheated oven at 190C/375F/ gas mark 5 for 35-40 minutes until the filling is set and the top has browned.

  5. Cool in the tin for 10 minutes and place on a serving dish.
