No-bake Cake (Torta Senza Cottura all' Italiana) Recipe
Ingredients

g/4 oz/1/2 cup unsalted (sweet) butter
-
175 g/6 oz plain
(semi-sweet) chocolate
-
75 g/3 oz almond macaroons,
or ready-made
-
175 g/6 oz/1 1/2 cups
walnuts
-
50 g/2 oz/1/2 cup pine nuts
-
75 g/3 oz/1/2 cup glace
(candied) cherries
-
30 ml/2 tbsp Grand Marnier
liqueur

225 g/8 oz/1 cup Mascarpone
cheese
Method:
-
Line a 20 cm/8 in sandwich tin (pan) with
Clingfilm (plastic wrap).
-
Melt the butter and chocolate in a saucepan over
hot water until softened.

Remove from the heat and stir in the Amaretti
biscuits, nuts and cherries.
-
Spoon the mixture into the sandwich tin and
chill for approximately 1 hour until set.
-
Turn out on to a serving plate and remove the
Clingfilm. Beat the Grand Marnier into the
Mascarpone cheese and spread over the top of the
cake.
