Ingredients
Digestive Biscuit Shell:

25 Digestive biscuits
(Graham crackers), crushed
-
75 g/3 oz/1/3 cup caster
(superfine) sugar
-
5 ml/1 tsp cinnamon
-
75 g/3 oz/1/3 cup soft
unsalted (sweet) butter
Filling:
-
120 ml/1/2 cup single
(light) cream
-
2 eggs
-
250 ml/1 cup Ricotta cheese
-
30 ml/2 tbsp lemon juice
-
5 ml/1 tsp vanilla essence
(extract)
-
100 g/4 oz/1/2 cup caster
(superfine) sugar
-
1.5 ml/1/4 tsp salt
-
45 ml/3 tbsp flour
Method:
-
Combine the pastry shell
ingredients and press into a deep 20 cm/8 in pie
tin (pan).
-
Reserve 15 ml/1 tbsp of
crumbs for the top of the pie.
-
Thoroughly mix all the
filling ingredients and pour into the lined pie
tin.
-
Bake in a preheated oven at
160°C/325°F/gas mark 3 for 50 minutes or until
firm. Sprinkle with the reserved crumbs.
