Italian Desserts Recipes - Lemon Cheesecake (Pasticcio al Formaggio Dolce) Recipe

Ingredients                                 

Digestive Biscuit Shell:

  • 25 Digestive biscuits (Graham crackers), crushed

  • 75 g/3 oz/1/3 cup caster (superfine) sugar

  • 5 ml/1 tsp cinnamon

  • 75 g/3 oz/1/3 cup soft unsalted (sweet) butter

Filling:

  • 120 ml/1/2 cup single (light) cream

  • 2 eggs

  • 250 ml/1 cup Ricotta cheese

  • 30 ml/2 tbsp lemon juice

  • 5 ml/1 tsp vanilla essence (extract)

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 1.5 ml/1/4 tsp salt

  • 45 ml/3 tbsp flour


Method:

  1. Combine the pastry shell ingredients and press into a deep 20 cm/8 in pie tin (pan).

  2. Reserve 15 ml/1 tbsp of crumbs for the top of the pie.

  3. Thoroughly mix all the filling ingredients and pour into the lined pie tin.

  4. Bake in a preheated oven at 160°C/325°F/gas mark 3 for 50 minutes or until firm. Sprinkle with the reserved crumbs.
