Italian Desserts Recipes - Lemon Chiffon Cake (Torta al Limone) Recipe

Ingredients                                     

  • 450 g/1lb/4 cups plain (all-purpose) flour

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • 10 ml/2 tsp baking powder

  • 5 ml/1 tsp salt

  • 120 ml/4 fl oz/1/2 cup oil

  • 7 eggs, separated

  • 175 ml/6 fl oz/3/4 cup cold water

  • 5 ml/1 tsp lemon juice

  • 2.5 ml/1/2 tsp cream of tartar

  • 1 quantity Lemon Topping


Method:

  1. Sift the flour and place in a bowl with the sugar. Add the baking powder, salt, oil, egg yolks, cold water and lemon juice. Beat well.

  2. Whisk the egg whites with the cream of tartar until very stiff. Add to the mixture and transfer immediately to an ungreased cake tin (pan).

  3. Bake in a preheated oven at 160°C/325°F/gas mark 3 for 50--60 minutes until risen, golden and firm.

  4. Cool, and when cold loosen the sides with a spatula or knife. Remove from the tin and coat with Lemon Topping.
