Italian Desserts Recipes - Lemon Rice Almond Pudding (Budino Li Limone, Riso e Mandorle) Recipe

Ingredients                             

  • 1 lemon

  • 100 g/4 oz/1/2 cup risotto rice

  • 600 ml/1 pt/2 1/2 cups milk

  • 75 g/3 oz/3/4 cup flaked (slivered) almonds, toasted

  • 5 ml/1 tsp vanilla extract (essence)

  • 75 g/3 oz/1/3 cup caster (superfine) sugar


Method:

  1. Using a sharp knife peel long thin shavings of rind from the lemon. Place the rind in a saucepan with the rice and milk.

  2. Bring to the boil, reduce the heat and simmer for 15 minutes until the rice is tender.

  3. Stir in the toasted almonds, vanilla essence and sugar and cook for 5 minutes more stirring.

  4. Remove the strips of lemon. Leave to cool then chill before serving.
