Italian Desserts Recipes - Luxury Nut Dessert (Splendido Dessert di Noci) Recipe

Ingredients                                 

  •  175 g/6 oz/1 1/2 cups ground nuts

  • 175 g/6 oz/3/4 cup caster (superfine) sugar

  • 175 g/6 oz plain (semi-sweet) chocolate, grated

  • 4 eggs, separated

  • 5 ml/1 tsp vanilla essence (extract)

  • 2.5 ml/1/2 tsp ground cinnamon

  • 2.5 ml/1/2 tsp grated nutmeg

  • 50 g/2 oz/1/3 cup candied peel

  • Butter, for greasing

  • 50 g/2 oz/1/2 cup chopped nuts


Method:

  1. Blend the ground nuts, sugar and grated chocolate in a bowl and mix in the egg yolks.

  2. Add the vanilla essence, cinnamon and nutmeg and stir well. Whisk the egg whites until stiff and fold into the mixture.

  3. Gradually mix in the candied peel. Butter an ovenproof dish and sprinkle with the chopped nuts.

  4. Pour the mixture into the dish and bake in a preheated oven at 180°C/350°F/gas mark 4 for 25 minutes. Serve hot.
