Italian Desserts Recipes - Milanese Trifle (Zuppa Inglese) Recipe

Ingredients                                 

  • 25 sponge (lady) fingers

  • 30 ml/2 tbsp Cointreau

  • 750 ml/1 1/4 pts/3 cups ready-made custard

  • 4 egg whites

  • 75 ml/5 tbsp caster (superfine) sugar

  • 300 g/11 oz Almond Macaroons (ready made, crushed)


Method:

  1. Arrange the sponge fingers in the base of an ovenproof dish.

  2. Sprinkle over the Cointreau and cover with half the custard.

  3. Beat the egg whites stiffly and fold in the sugar. Spoon on top of the custard and cover with the remaining custard.

  4. Sprinkle over the macaroons. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 20 minutes until brown on top. Serve while still warm.
