Ingredients

25 sponge (lady) fingers
-
30 ml/2 tbsp Cointreau
-
750 ml/1 1/4 pts/3 cups
ready-made custard
-
4 egg whites
-
75 ml/5 tbsp caster
(superfine) sugar

300 g/11 oz Almond
Macaroons
(ready
made, crushed)
Method:
-
Arrange the sponge fingers
in the base of an ovenproof dish.
-
Sprinkle over the Cointreau
and cover with half the custard.
-
Beat the egg whites stiffly
and fold in the sugar. Spoon on top of the
custard and cover with the remaining custard.
-
Sprinkle over the
macaroons. Bake in a preheated oven at
190°C/375°F/gas mark 5 for 20 minutes until
brown on top. Serve while still warm.
