Milk Sponge Cake
(Pan di Spagna al Latte) Recipe
Ingredients

150 ml/2/3 cup milk
-
3 eggs
-
175 g/6 oz/3/4 cup caster
(superfine) sugar
-
5 ml/1 tsp lemon juice
-
350 g/12 oz/3 cups plain
(all-purpose) flour
-
5 ml/1 tsp baking powder

300 ml/1 1/4 cups double
(heavy) cream, to serve
Method:

Heat the milk in a
saucepan. Beat the eggs, sugar and lemon juice
until they are thick and creamy.

Add the flour and baking
powder and gradually stir in the hot milk. Beat
well.

Pour into a greased 20 cm/8
in cake tin (pan) and bake in a preheated oven
at 180°C/350°F/gas mark 4 for 20 minutes. Serve
with double cream.
