Italian Desserts Recipes - Milk Sponge Cake (Pan di Spagna al Latte) Recipe

Ingredients                                     

  • 150 ml/2/3 cup milk

  • 3 eggs

  • 175 g/6 oz/3/4 cup caster (superfine) sugar

  • 5 ml/1 tsp lemon juice

  • 350 g/12 oz/3 cups plain (all-purpose) flour

  • 5 ml/1 tsp baking powder

  • 300 ml/1 1/4 cups double (heavy) cream, to serve


Method:

  1. Heat the milk in a saucepan. Beat the eggs, sugar and lemon juice until they are thick and creamy.

  2. Add the flour and baking powder and gradually stir in the hot milk. Beat well.

  3. Pour into a greased 20 cm/8 in cake tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes. Serve with double cream.
