Mocha Mousse
(Dolce al Caffe) Recipe
Ingredients
175 g/6 oz plain
(semi-sweet) chocolate
45 ml/3 tbsp strong black
coffee
2 egg yolks
5 egg whites
50 g/2 oz/1/4 cup caster
(superfine) sugar
150 ml/2/3 cup double
(heavy) cream, whipped
Method:
Grate a little of the
chocolate and reserve for decoration.
Break the remaining
chocolate into small pieces and melt with the
coffee in a bowl over a pan of hot water.
Remove from the heat and
beat in the egg yolks. Allow to cool for 10
minutes.
Whisk the egg whites until
stiff then whisk in the sugar. Carefully fold
the egg whites into the chocolate mixture a
little at a time. Then fold in half of the
whipped cream.
Spoon into a large glass
bowl and chill until set. Pipe the remaining
cream on the top of the mousse and decorate with
the reserved chocolate.
