Italian Desserts Recipes - Mont Blanc (Montebianco) Recipe

Ingredients                                 

  • 450 g/1lb chestnuts

  • 300 ml/1 1/4 cups milk

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 300 ml/1 1/4 cups whipping cream

  • 2.5 ml/1/2 tsp vanilla essence (extract)


Method:

  1. Slit the outer skin of the chestnuts and roast or boil for 20 minutes. Remove the outer and inner brown skins.

  2. Break the softened chestnuts and place in a saucepan Pour in the milk and sugar. Cook, stirring all the time until the mixture has thickened.

  3. Press through a sieve (strainer) into a glass bowl. Whip the cream, add the vanilla essence, and spoon over the top of the chestnut mixture.
