Italian Desserts Recipes - Orange Soufflé (Sformata di Arrancia) Recipe

Ingredients

  • 10 eggs, separated

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • Grated rind and juice of 1 orange

  • 45 ml/3 tbsp fine semolina (cream of wheat)

  • Juice of 1 lemon


Method:

  1. Beat the egg yolks and sugar until very thick and creamy.

  2. Add the orange rind and juice, then the semolina. Beat in the lemon juice.

  3. Whisk the egg whites until stiff and gently fold in with a metal spoon.

  4. Turn into a large, greased soufflé dish and bake in a preheated oven at 180C/350F/gas mark 4 for 40-50 minutes until well risen and just set. Serve straight away.
