Peach and Plum
Pudding (Budino di Pesche e Susine) Recipe
Ingredients

1 sweet loaf or large
brioche
-
2 eggs, beaten
-
150 ml/2/3 cup milk
-
4 peaches, stoned (pitted),
skinned and sliced
-
225 g/8 oz plums, stoned
(pitted) and sliced
-
60 ml/4 tbsp light brown
sugar
-
5 ml/1 tsp ground cinnamon
-
10 ml/2 tsp icing
(confectioners') sugar for dusting

Cream, to serve
Method:

Cut the loaf into 10 slices. Blend together the
beaten eggs and milk and dip the slices into the
mixture.

Layer them in a pie dish with the peaches and
plums, making sure they overlap slightly.

Pour the remaining egg mixture over the fruit
and sprinkle over the brown sugar and cinnamon.

Bake in a preheated oven at 200°C/400°F/gas mark
6 for 15 minutes until the egg has set and the
top is brown.

Dust with icing sugar and serve with cream.
