Italian Desserts Recipes - Peach and Plum Pudding (Budino di Pesche e Susine) Recipe

Ingredients                                 

  • 1 sweet loaf or large brioche

  • 2 eggs, beaten

  • 150 ml/2/3 cup milk

  • 4 peaches, stoned (pitted), skinned and sliced

  • 225 g/8 oz plums, stoned (pitted) and sliced

  • 60 ml/4 tbsp light brown sugar

  • 5 ml/1 tsp ground cinnamon

  • 10 ml/2 tsp icing (confectioners') sugar for dusting

  • Cream, to serve


Method:

  1. Cut the loaf into 10 slices. Blend together the beaten eggs and milk and dip the slices into the mixture.

  2. Layer them in a pie dish with the peaches and plums, making sure they overlap slightly.

  3. Pour the remaining egg mixture over the fruit and sprinkle over the brown sugar and cinnamon.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 15 minutes until the egg has set and the top is brown.

  5. Dust with icing sugar and serve with cream.
