Italian Desserts Recipes - Ravenna Sponge Cake (Pan di Spagne Ravenna) Recipe

Ingredients                                 

  • 60 ml/4 tbsp instant coffee granules or powder

  • 175 g/6 oz/3/4 cup caster (superfine) sugar

  • 350 g/12 oz/3 cups plain (all-purpose) flour

  • 10 ml/2 tsp baking powder

  • 6 eggs, separated

  • A little butter for greasing


Method:

  1. Dissolve the coffee in 300 ml/1 1/4 cups of water and allow to cool.

  2. Mix the sugar, flour and baking powder together with the egg yolks. Stir in the coffee.

  3. Whisk the egg whites until stiff and fold into the mixture. Pour into a greased 23 cm/9 in cake tin (pan).

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 35-40 minutes until risen and golden and the centre springs back when pressed.
