Italian Desserts Recipes - Roman Violet Liqueur (Liquore Romano Viola) Recipe

Ingredients                                 

  • Rind of 1 orange, cut into strips

  • 300 ml/1 1/4 cups brandy

  • 8 whole cloves

  • 2.5 cm/1 in piece of cinnamon stick

  • 1 piece star anise

  • 50 Parma violets, stems and green leaves removed

  • 15 ml/1 tbsp orris root

  • 1/2 vanilla pod

  • 225 g/8 oz/1 cup granulated sugar

  • 15 ml/1 tbsp violet food coloring

  • Vanilla Ice Cream, to serve


Method:

  1. Place all the ingredients except the sugar and food coloring in a wide-necked jar and allow to stand for 2 weeks, shaking occasionally.

  2. Pour in the sugar and allow to stand for a further 2 weeks. Strain through a paper coffee filter and stir in the food coloring.

  3. Rebottle and use poured over Vanilla Ice Cream.
