Ingredients

Rind of 1 orange, cut into
strips

300 ml/1 1/4 cups brandy
-
8 whole cloves
-
2.5 cm/1 in piece of
cinnamon stick
-
1 piece star anise
-
50 Parma violets, stems and
green leaves removed
-
15 ml/1 tbsp orris root
-
1/2 vanilla pod
-
225 g/8 oz/1 cup granulated
sugar
-
15 ml/1 tbsp violet food
coloring

Vanilla Ice Cream, to serve
Method:
-
Place all the ingredients
except the sugar and food coloring in a
wide-necked jar and allow to stand for 2 weeks,
shaking occasionally.

Pour in the sugar and allow
to stand for a further 2 weeks. Strain through a
paper coffee filter and stir in the food
coloring.
-
Rebottle and use poured
over Vanilla Ice Cream.
