Italian Desserts Recipes - Whipped Marsala Custard (Zabaglione) Recipe

Ingredients                                 

  • 6 egg yolks

  • 90 ml/6 tbsp caster (superfine) sugar

  • 90 ml/6 tbsp cold water

  • 90 ml/6 tbsp Marsala

  • Small ratafia biscuits (almond cookies), to serve


Method:

  1. Place all the ingredients except the biscuits into the top half of a double boiler over hot, but not boiling, water.

  2. Whisk continuously for 15-20 minutes until the mixture thickens to a smooth, foamy consistency.

  3. Remove from the heat every 5 minutes but continue whisking.

  4. Pour into decorative, stemmed glasses and serve with the ratafia biscuits. The mixture can be cooled and chilled, if preferred.
