Italian Fish Recipes - Baked Fillet of Sole with Prawn Sauce (Filetto di Sogliola al Forno con Salsa di Gamberetti) Recipe

 

Ingredients

  • 1 small onion, diced

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 225 g/8 oz cooked peeled prawns (shrimp)

  • 30 ml/2 tbsp dry sherry

  • 450 ml/3/4 pt/2 cups Mushroom Soup, or a large can

  • 6 sole fillets, skinned

  • Salt and freshly ground black pepper


Method:

  1. Fry (sauté) the onion in the butter and add the prawns and sherry.

  2. Cook for 5 minutes and mix in the mushroom soup. Continue cooking for 1 minute.

  3. Lay the fillets of sole in a large dish and pour over the prawn sauce. Season with the salt and pepper.

  4. Bake in a preheated oven at 180°C/ 350°F/gas mark 4 for 25 minutes.
