Baked Fillet of Sole with Prawn Sauce (Filetto di Sogliola al Forno con
Salsa di Gamberetti)

Ingredients

1 small onion, diced
-
15 g/1/2 oz/1 tbsp unsalted (sweet) butter
-
225 g/8 oz cooked
peeled prawns (shrimp)
-
30 ml/2
tbsp dry sherry
-
450 ml/3/4 pt/2 cups Mushroom Soup, or a
large can

6 sole fillets, skinned
-
Salt and freshly
ground black pepper
Method:
-
Fry (sauté) the onion in the butter and add the
prawns and sherry.

Cook for 5 minutes and mix in
the mushroom soup. Continue cooking for 1
minute.

Lay the fillets of sole in a large dish
and pour over the prawn sauce. Season with the
salt and pepper.

Bake in a preheated oven at
180°C/ 350°F/gas mark 4 for 25 minutes.
