Baked Fillets in Wine Sauce (Filetti al Forno con Sugo
al Vino)

Ingredients

5 shallots,
chopped
-
100 g/4 oz
mushrooms, sliced
-
75 g/3 oz/1/3 cup
unsalted (sweet) butter
-
30 ml/2 tbsp chopped fresh
parsley
-
225 g/8 oz sole or plaice fillets, skinned
-
150 ml/2/3 cup white wine
-
150 ml/2/3
cup fish or chicken stock
-
1/2 lemon
-
25 g/1 oz/1/4 cup
plain (all-purpose) flour
-
Salt and freshly ground
black pepper
Method:
-
Fry (saute) the shallots and mushrooms in half
the butter until soft and brown.

Stir in the
parsley and spread over the base of an ovenproof
dish. Roll up the sole fillets from the tail to
the head and secure each with a cocktail stick.

Place on top of the shallots. Pour over the wine
and stock. Squeeze the lemon and pour the juice
over the sole. Season well.

Bake in a preheated
oven at 180°C/350°F/gas mark 4 for 15 minutes.
Drain and lay on a warm serving dish. Keep hot.

Heat the remaining butter
in a saucepan and add the flour.
Cook for 1
minute.

Strain the cooking liquid from the fish
and gradually add to the butter and flour mix,
stirring until the sauce thickens.

Simmer for 2
minutes. Pour over the fish. Spoon the mushrooms
and shallots around the fish. Serve hot
