Baked Flatfish with Sherry Butter (Passerino con Sherry
al Forno)

Ingredients

6 f1atfish
fillets, skinned

45 g/1
1/2 oz/3
tbsp unsalted (sweet) butter
-
30 ml/2 tbsp lemon
juice
-
1 onion, chopped
-
1 garlic clove,
chopped
-
2 celery sticks,
finely chopped
-
60 ml/4 tbsp dry
sherry
-
25 g/1/4 cup
plain (all-purpose) flour
-
Salt and freshly
ground black pepper
-
60 ml/4 tbsp milk
-
60 ml/4 tbsp
double (heavy) cream
Method:
-
Wash the fillets and dry on kitchen paper. Use
two-thirds of the butter to grease a shallow
baking dish.

Arrange the fillets in the dish.
Blend the lemon juice, onion and garlic together
and pour over the fish.

Cover with foil and bake
in a preheated oven at 180°C/350°F/gas mark 4
for 15 minutes.

Melt the remaining butter in a
saucepan and fry (sauté) the celery for 3
minutes. Pour in the sherry and season with salt
and pepper.

Cover with a lid and cook slowly for
10-15 minutes. Add the flour and stir well. Stir
in the juices from the fish dish and slowly add
the milk.

Bring to the boil and cook for two
minutes, stirring. Blend in the cream. Pour the
sauce over the fish and serve at once.
