Baked Mustard and Herb Fish (Pesce al Forno con Mostarda
e Odori)

Ingredients

Oil for greasing

450 g/1
lb thick white fish fillets, skinned
-
45 ml/3 tbsp double
(heavy) cream or crème fraiche
-
15
ml/1 tbsp made mustard
-
30 ml/2 tbsp chopped fresh
herbs
-
1.5 ml/1/4 tsp chopped fresh root ginger
-
Salt and freshly ground
black pepper
Method:
-
Brush an ovenproof dish with the oil and add the fish fillets.
-
Blend the
cream, mustard, fresh herbs and ginger together
in a bowl.
-
Season the cod fillets with salt and
pepper and spread with the cream mixture.
-
Bake
in a preheated oven at 180°C/350°F/ gas mark 4
for 25 minutes.
