Baked Turbot with Tomatoes (Pesce Rombo al Forno con
Pomidori) Recipe
Ingredients
-
1 kg/2 1/4 lb turbot fillets
-
25 g/1 oz/2 tbsp unsalted (sweet) butter
-
1 egg
-
60 ml/4 tbsp double (heavy) cream
-
30 ml/2 tbsp white wine
-
Salt and freshly ground black pepper
-
30 ml/2 tbsp chopped fresh parsley
Method:
-
Fry (sauté) the fish in the butter for 5
minutes. Place in a large ovenproof dish.

Combine the egg, cream, wine, salt, a grinding
of pepper and the parsley.
-
Pour over the sauce and lay the sliced tomatoes
around the edge of the dish.
-
Place in a preheated oven at 180°C/350°F/gas
mark 4 for 20 minutes.
