Italian Fish Recipes - Baked Turbot with Tomatoes (Pesce Rombo al Forno con Pomidori) Recipe

 

Ingredients

  • 1 kg/2 1/4 lb turbot fillets

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 1 egg

  • 60 ml/4 tbsp double (heavy) cream

  • 30 ml/2 tbsp white wine

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Fry (sauté) the fish in the butter for 5 minutes. Place in a large ovenproof dish.

  2. Combine the egg, cream, wine, salt, a grinding of pepper and the parsley.

  3. Pour over the sauce and lay the sliced tomatoes around the edge of the dish.

  4. Place in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes.
