Italian Fish Recipes - Capers, Tomatoes and Mullet (Capperi, Pomodori e Triglie) Recipe

 

Ingredients             

  • 10 g/1/4 oz/2 tsp unsalted (sweet) butter

  • 5 ml/1 tsp salt

  • 4 small red mullet, cleaned and scaled

  • 30 ml/2 tbsp olive oil

  • 2 onions, sliced

  • 2 garlic cloves, crushed

  • 3 tomatoes, skinned and chopped

  • 250 ml/8 fl oz/1 cup dry white wine

  • 5 ml/1 tsp chopped fresh oregano

  • 5 ml/1 tsp made mustard

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp capers

  • 2 sprigs of parsley


Method:

  1. Lightly grease a large ovenproof dish with the butter and set aside.

  2. Sprinkle the salt over the fish and make 3 or 4 diagonal cuts across each fish. Place in the dish.

  3. Heat the oil in a saucepan and fry (sauté) the onions and garlic for 5 minutes. Stir in the tomatoes, wine, oregano and mustard and bring to the boil.

  4. Reduce the heat and cook for 35 minutes. Season with the salt and pepper. Pour the sauce over the fish.

  5. Cover loosely with foil and bake for 35 minutes in a preheated oven at 180°C/350°F/gas mark 4.

  6. Remove the foil, sprinkle over the capers and continue baking for a further 10 minutes to brown the top of the fish.

  7. Remove from the dish and garnish with the parsley.
