Celery with Mullet (Sedano con Triglie)
Recipe
Ingredients

1.5 kg/3
lb grey
mullet, cleaned, scaled and filleted
-
5 ml/1
tsp salt
-
Freshly ground
black pepper
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
15 ml/1 tbsp olive oil
-
1 onion, sliced
-
3 celery sticks,
cleaned and chopped
-
100 g/4 oz mushrooms, cleaned
and quartered

250 ml/1
cup white wine
-
150 ml/2/3 cup
fish stock
-
450 ml/3/4 pt/2
cups Basic White Sauce
-
15 ml/1 tbsp
chopped fresh marjoram
Method:
-
Sprinkle the fish with the salt and pepper and
set aside. Melt half of the butter with the
olive oil in a large saucepan and try (sauté)
the onion and celery for 4 minutes.

Arrange the
fish over the vegetables. Melt the remaining
butter in a frying pan (skillet) and fry the
mushrooms for 3 minutes.

Spoon over the fish.
Pour over the wine and fish stock and cover the
pan with a lid or foil, allowing the steam to
escape.

Cook over a low heat and poach the fish
for 15 minutes. Remove the fish and transfer to
a heated serving dish. Keep warm.

Increase the
heat under the saucepan and boil for 5 minutes
until the liquid is reduced by half.

Reduce the
heat and stir in the white sauce. Cook,
stirring, for 5 minutes. Pour over the fish and
sprinkle with the marjoram.
