Italian Fish Recipes - Clams, Pesto and Spaghetti (Vongole, Pesto e Spaghetti) Recipe

 

Ingredients             

  • 2 garlic cloves, peeled

  • 15 ml/1 tbsp olive oil

  • 1 small onion, chopped

  • 90 ml/6 tbsp white wine

  • 150 ml/2/3 cup fish or chicken stock

  • 450 g/1 lb baby clams in shells

  • 275 g/10 oz spaghetti

  • 75 ml/5 tbsp Red Pesto Sauce


Method:

  1. Crush the garlic cloves and fry (sauté) in the oil with the onion for 1 minute. Pour in the wine and stock and bring to the boil.

  2. Add the clams and cover with a lid. Cook for 3 minutes to open the clams. Discard any clams which have not opened.

  3. Bring a large pan of salted water to the boil and cook the spaghetti for 5 minutes until tender.

  4. Drain and pour into a warmed serving dish. Add the clams.

  5. Heat the Red Pesto Sauce in a saucepan for 1 minute. Pour over the pasta and clams. Toss and serve.
