Italian Fish Recipes - Cod Fillet in Caper Sauce (Filetto di Merlizzo con Salsa di Capperi) Recipe

 

Ingredients             

  • 5 ml/1 tsp corn flour (cornstarch)

  • 150 ml/2/3 cup dry white wine

  • 8 small cod fillets, skinned

  • 300 ml/1 1/4 cups fish stock

  • 1.5 ml/1/4 tsp salt

  • 1.5 ml/1/4 tsp freshly ground black pepper

  • 8 raw king prawns (jumbo shrimp), peeled

  • 1.5 ml/1/4 tsp cayenne

  • 150 ml/2/3 cup double (heavy) cream

  • 30 ml/2 tbsp capers


Method:

  1. Mix the corn flour with 15 ml/1 tbsp of the white wine in a basin and set aside.

  2. Roll up the cod fillets and fasten each with a cocktail stick (toothpick). Place the rolled fillets in a saucepan and pour over the stock, white wine, salt and pepper.

  3. Bring to the boil, reduce the heat, cover and simmer for 20 minutes, add the prawns for the last 5 minutes.

  4. Remove the fish fillets and prawns and arrange in a warmed serving dish. Keep hot.

  5. Bring the liquid to the boil and boil rapidly for 8 minutes to reduce. Stir in the dissolved corn flour and the cayenne.

  6. Reduce the heat and simmer, stirring all the time, for 2 minutes.

  7. Remove from the heat and stir in the cream and capers. Pour the sauce over the fish. Serve immediately.
