Cod Fillet in Caper Sauce (Filetto di Merlizzo con Salsa
di Capperi)

Ingredients

5 ml/1 tsp corn
flour (cornstarch)

150 ml/2/3 cup dry
white wine
-
8 small cod fillets, skinned
-
300 ml/1
1/4
cups fish stock
-
1.5 ml/1/4 tsp salt
-
1.5 ml/1/4 tsp
freshly ground black pepper
-
8 raw king prawns
(jumbo shrimp), peeled
-
1.5 ml/1/4
tsp cayenne
-
150 ml/2/3 cup double (heavy) cream
-
30 ml/2 tbsp
capers
Method:
-
Mix the
corn flour with 15 ml/1 tbsp of the white
wine in a basin and set aside.

Roll up the cod
fillets and fasten each with a cocktail stick
(toothpick). Place the rolled fillets in a
saucepan and pour over the stock, white wine,
salt and pepper.

Bring to the boil, reduce the
heat, cover and simmer for 20 minutes, add the
prawns for the last 5 minutes.

Remove the fish
fillets and prawns and arrange in a warmed
serving dish. Keep hot.

Bring the liquid to the
boil and boil rapidly for 8 minutes to reduce.
Stir in the dissolved corn flour and the cayenne.

Reduce the heat and simmer, stirring all the
time, for 2 minutes.

Remove from the heat and
stir in the cream and capers. Pour the sauce
over the fish. Serve immediately.
