Creamed Prawns (Gamberetti con Creama)

Ingredients

75 g/3 oz/1/3 cup
unsalted (sweet) butter
-
100 g/4 oz
mushrooms, sliced
-
45 ml/3 tbsp plain
(all-purpose) flour
-
250 ml/1 cup milk
-
150 ml/2/3
cup white wine
-
450 g/1lb cooked
peeled prawns (shrimp)
-
100 g/4 oz peas,
cooked
-
60 ml/4 tbsp
breadcrumbs
-
45 ml/3 tbsp
grated Parmesan cheese
-
15 ml/1 tbsp chopped fresh
parsley
Method:
-
Grease an ovenproof baking dish with 5 ml/1 tsp
of the butter and set aside.

Melt half of the
remaining butter and fry (sauté) the mushrooms
for 2 minutes.

Remove the mushrooms from the pan
and set aside. Add the remaining butter to the
pan and stir in the flour.

Cook for 1 minute and
gradually stir in the milk and wine. Cook,
stirring constantly, for 3-4 minutes until the
sauce is smooth.

Stir in the mushrooms, prawns
and peas and simmer for 5 minutes. Pour the
mixture into the greased baking dish.

Mix the
breadcrumbs and cheese together and sprinkle
over the top of the shrimps.

Grill (broil) for 5
minutes until brown on top. Sprinkle over the
chopped parsley and serve immediately.
