Italian Fish Recipes - Crumbly Topped Seafood (Frutti di Mare con Guarnizione Friabile) Recipe

 

Ingredients             

  • 30 ml/2 tbsp olive oil

  • 2 garlic cloves, crushed

  • 100 g/4 oz mushrooms, quartered

  • 350 g/12 oz white fish fillets, skinned

  • Salt and freshly ground black pepper

  • 175 g/6 oz squid, cut into small pieces

  • 225 g/8 oz cooked, peeled prawns (shrimp)

  • 75 ml/5 tbsp dry white wine

  • 90 ml/6 tbsp single (light) cream

  • 90 ml/6 tbsp breadcrumbs

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Heat the oil in a large frying pan (skillet) and cook the garlic for 1 minute. Stir in the mushrooms and cook for 3 minutes.

  2. Cut the fish into 4 cm/1 1/2 in pieces and add to the oil. Cook, stirring for 3 minutes and season with the salt and pepper.

  3. Stir in the squid and prawns. Pour in the wine and simmer for 1 minute.

  4. Gradually blend in the cream then transfer the mixture to an ovenproof dish.

  5. Sprinkle over the breadcrumbs and bake in a preheated oven at 190°C/375°F/gas mark 5 for 10 minutes. Serve sprinkled with the chopped parsley.
