Ingredients

30 ml/2 tbsp olive
oil
-
2 garlic cloves,
crushed
-
100 g/4 oz
mushrooms, quartered
-
350 g/12 oz white fish fillets,
skinned
-
Salt and freshly ground black pepper
-
175 g/6
oz squid, cut into small pieces
-
225 g/8 oz cooked,
peeled prawns (shrimp)
-
75 ml/5 tbsp dry
white wine
-
90 ml/6 tbsp single
(light) cream
-
90 ml/6 tbsp
breadcrumbs
-
15 ml/1 tbsp
chopped fresh parsley
Method:

Heat the oil in a
large frying pan (skillet) and cook the garlic
for 1 minute. Stir in the mushrooms and cook for
3 minutes.

Cut the fish into 4 cm/1 1/2 in pieces
and add to the oil. Cook, stirring for 3 minutes
and season with the salt and pepper.

Stir in the
squid and prawns. Pour in the wine and simmer
for 1 minute.

Gradually blend in the cream then
transfer the mixture to an ovenproof dish.

Sprinkle over the breadcrumbs and bake in a
preheated oven at 190°C/375°F/gas mark 5 for 10
minutes. Serve sprinkled with the chopped
parsley.
