Ingredients

25 g/2 tbsp
unsalted (sweet) butter
-
1 onion, trimmed
and chopped
-
4 carrots, thinly
sliced
-
Grated rind and
juice of 1 lemon
-
Salt and freshly ground black
pepper
-
15 ml/1 tbsp chopped fresh thyme
-
8 small white fish
fillets, skinned
-
6 large tomatoes,
skinned and sliced
Method:
-
Melt the butter in a frying pan (skillet) and add the chopped onion and
carrot. Cook gently for 2 minutes.

Remove the
pan from the heat and add the lemon rind and
juice.
Season with the salt and pepper.

Sprinkle the
thyme over the fish fillets and roll up,
starting from the thick end.

Lightly oil four
large sheets of foil or non-stick baking
parchment. Divide the tomatoes between the
sheets.

Spread the onion and carrots on top and
place two fish rolls on each. Seal the parcels
tightly and place in a roasting tin (pan).

Bake
in a preheated oven at 190°C/375°F/gas mark 5
for 20 minutes. Serve one parcel per person.
