Italian Fish Recipes - Fried Mussels (Cozze Fritte) Recipe

 

Ingredients             

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • Salt and freshly ground black pepper

  • 1 egg

  • 150 ml/2/3 cup milk

  • 900 g/2 lb mussels, scrubbed and beards removed

  • Oil for frying

  • Creamy Garlic Sauce


Method:

  1. Sift the flour and salt and pepper into a bowl. Beat in the egg and milk until the mixture is smooth and thick.

  2. Immerse the mussels in a pan of boiling salted water and cook for 3 minutes.

  3. Remove the mussels from the shells, discarding any that do not open.

  4. Dip the mussels in the batter to coat and fry (sauté) for 1 minute in hot oil until the batter is crisp and golden brown. Serve with Creamy Garlic Sauce.
