Fried Mussels (Cozze Fritte)

Ingredients

100 g/4 oz/1 cup
plain (all-purpose) flour

Salt and freshly
ground black pepper

1 egg
-
150 ml/2/3 cup
milk
-
900 g/2 lb mussels,
scrubbed and beards removed
-
Oil for frying
-
Creamy Garlic Sauce
Method:
-
Sift the flour and salt and pepper into a bowl. Beat in the egg and milk
until the mixture is smooth and thick.
-
Immerse
the mussels in a pan of boiling salted water and
cook for 3 minutes.
-
Remove the mussels from the
shells, discarding any that do not open.
-
Dip the
mussels in the batter to coat and fry (sauté)
for 1 minute in hot oil until the batter is
crisp and golden brown. Serve with Creamy Garlic
Sauce.
