Italian Fish Recipes - Grilled Seafood (Frulti di Mare Gratinati) Recipe

 

Ingredients             

  • 16 large fresh mussels, in shells

  • 8 large oysters, in shells

  • 4 fresh razor shells

  • 20 large fresh clams, in shells

  • 4 scallops, shelled

  • 60 ml/4 tbsp fresh breadcrumbs

  • 60 ml/4 tbsp Pecorino or Parmesan cheese, grated

  • 3 garlic cloves, finely chopped

  • 45 ml/3 tbsp chopped fresh parsley

  • 75 ml/5 tbsp olive oil


Method:

  1. Carefully clean and scrub all the shellfish, discarding any which are not closed.

  2. Place them in a large pan with just enough water to cover the base of the pan. Place over a high heat, cover and steam for 5-8 minutes until the shellfish open.

  3. Discard any which remain closed. Remove from the pan and allow to cool quickly.

  4. Remove them from their shells and arrange in a single layer in a shallow flameproof dish.

  5. Mix together all the other ingredients except the olive oil, cover the top of each piece of seafood with this mixture, then drizzle the olive oil over the top.

  6.   Grill (broil) the seafood under a moderate grill (broiler) for 5 minutes, then serve at once.
