Italian Fish Recipes - Grilled Tuna (Tonno alla Griglia) Recipe

 

Ingredients

  • 15 ml/1 tbsp olive oil

  • 4 tuna steaks

  • Salt and freshly ground black pepper

  • 10 ml/2 tsp chopped fresh tarragon

  • 3 canned anchovy fillets

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter, softened

  • 2.5 ml/1/2 tsp lemon juice

  • 120 ml/4 fl oz/1/2 cup Tomato Sauce

  • Sprigs of parsley


Method:

  1. Drizzle oil over the tuna in a shallow dish and season with salt and pepper.

  2. Sprinkle over half the tarragon and leave to marinate. Pound the anchovies and blend in the softened butter.

  3. Stir in the lemon juice and shape into a roll. Wrap in kitchen foil and chill.

  4. Heat the tomato sauce slowly. Place the tuna pieces on foil on a grill (broiler) rack.

  5. Top with slices of the anchovy butter and grill (broil) for 3 minutes on each side. Spoon over the sauce and garnish with the parsley.
