Italian Fish Recipes - Ionian Tuna (Tonno Ionico) Recipe

Ingredients             

  • 1 aubergine (eggplant), roughly chopped

  • 1 kg/2 1/4lb fresh tuna

  • 2 onions, chopped

  • 45 ml/3 tbsp olive oil

  • 2 tomatoes, skinned, seeded and chopped

  • 8 black olives, stoned (pitted)

  • 2 garlic cloves, chopped

  • 15 ml/1 tbsp chopped fresh oregano

  • Salt and freshly ground black pepper

  • 300 ml/1 1/4 cups fish stock


Method:

  1. Boil the aubergine in salted water for 3 minutes. Drain. Skin the tuna fish and cut into 2.5 cm/1 in cubes.

  2. Place the fish in a casserole dish (Dutch oven) and add the aubergine, chopped onions, oil, tomatoes, olives, garlic, oregano and salt and pepper.

  3. Pour over the fish stock. Season and cover with a lid or foil. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 25 minutes.
