Ionian Tuna (Tonno Ionico)

Ingredients

1 aubergine
(eggplant), roughly chopped
-
1 kg/2 1/4lb fresh
tuna
-
2 onions, chopped
-
45 ml/3 tbsp olive
oil
-
2 tomatoes,
skinned, seeded and chopped
-
8 black olives,
stoned (pitted)
-
2 garlic cloves,
chopped
-
15 ml/1 tbsp chopped
fresh oregano
-
Salt and freshly ground black pepper

300 ml/1
1/4 cups fish stock
Method:
-
Boil the aubergine in salted water for 3 minutes. Drain. Skin the tuna
fish and cut into 2.5 cm/1 in cubes.

Place the
fish in a casserole dish (Dutch oven) and add
the aubergine, chopped onions, oil, tomatoes,
olives, garlic, oregano and salt and pepper.

Pour over the fish stock. Season and cover with
a lid or foil. Bake in a preheated oven at
190°C/375°F/gas mark 5 for 25 minutes.
