Italian Fish Recipes - Lobster with Parmsan (Aragosta con Parmigiano) Recipe

 

Ingredients             

  • 2 large lobsters, cooked

  • 15 g/1lb/1 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 300 ml/1 1/4 cups milk

  • Salt and freshly ground black pepper

  • 100 g/4 oz/1 cup Parmesan cheese, grated

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Halve the lobsters and crack the claws. Remove the gills, green sac behind the head and the long black vein down the body.

  2. Place the lobsters in a casserole dish (Dutch oven). Melt the butter in a saucepan and stir in the flour.

  3. Cook for 1 minute and gradually stir in the milk. Season with the salt and pepper and cook, stirring until the sauce thickens.

  4. Add half the cheese and continue cooking for 1 minute. Pour the sauce over the lobsters and sprinkle with the remaining cheese.

  5. Bake in a preheated oven at 180°C/ 350°F/gas mark 4 for 20 minutes. Garnish with chopped parsley and serve.
