Italian Fish Recipes - Mediterranean Sea Bream (Scardine di Mare Mediterraneo) Recipe

 

Ingredients             

  • 30ml/2 tbsp chopped fresh thyme

  • 15ml/1 tbsp chopped fresh coriander

  • 4 x 225g/8 oz sea bream, cleaned and scaled

  • 25g/3 tbsp unsalted (sweet) butter

  • salt and freshly ground black pepper

  • 120ml/1/2 cup white wine

  • 15ml/1 tbsp olive oil

  • 3 tomatoes, sliced

  • small new potatoes, boiled, to serve


Method:

  1. Blend the chopped thyme and coriander together. Make two deep incisions along the back of the fish and insert some of the herbs.

  2. Place the butter inside the fish and sprinkle with the salt and pepper. Place the fish on a rack in a large roasting tin (pan).

  3. Pour over the wine, olive oil and remaining herbs. Arrange the tomato slices on top.

  4. Bake in a preheated oven at 180C/350F/gar mark 4 for 20 minutes.

  5. Remove from the oven and baste the fish with the juices. Continue cooking for a further 10 minutes and serve with new potatoes.
