Italian Fish Recipes - Messina Mullet (Triglie Messinese) Recipe

 

Ingredients             

  • 60 ml/4 tbsp olive oil

  • 5 ml/1 tsp salt

  • 4 small grey mullet, cleaned

  • 4 shallots, sliced

  • 4 tomatoes, peeled and sliced

  • 1 carrot, scraped and cut into strips

  • 250 ml/8 fl oz/1 cup dry white wine

  • 5 ml/1 tsp chopped fresh oregano

  • lemon quarters, to garnish


Method:

  1. Lightly oil a large baking dish and set aside. Sprinkle the salt over the fish and make 3 or 4 diagonal cuts across each fish.

  2. Arrange the sliced shallots in the base of the baking dish. Top with the tomato slices and carrot strips.

  3. Lay the fish over the vegetables and pour over the remaining olive oil and the white wine. Sprinkle with the oregano and cover loosely with foil.

  4. Bake for 35 minutes in a preheated oven at 180°C/350°F/gas mark 4.

  5. Remove the foil and continue baking for a further 10 minutes to brown the top of the fish. Remove from the dish and garnish with the lemon.
