Italian Fish Recipes - Mushroom Mullet (Triglie con Funghi) Recipe

 

Ingredients             

  • 45 ml/3 tbsp olive oil

  • 1 garlic clove, crushed

  • 1 onion, finely chopped

  • 225 g/8 oz mushrooms, chopped

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh parsley

  • 50 g/2 oz/1 cup breadcrumbs

  • 4 red mullet, cleaned and scaled


Method:

  1. Grease a shallow ovenproof dish with a little of the oil. Place the remaining oil in a frying pan (skillet) and add the garlic and onion.

  2. Fry (sauté) for 5 minutes until the onion is translucent. Add the mushrooms. Season with the salt and pepper and blend in half of the parsley.

  3. Stir in the breadcrumbs and continue cooking for 3 minutes. Spoon into the dish and arrange the red mullet on top.

  4. Cover with greaseproof (waxed) paper or foil and bake in a preheated oven for 10 minutes at 180°C/350°F/gas mark 4.

  5. Remove the paper and bake for a further 10 minutes until the fish is cooked through and tinged with brown. Sprinkle with the remaining parsley.
