Mushroom Mullet (Triglie con Funghi)

Ingredients

45 ml/3 tbsp olive
oil
-
1 garlic clove,
crushed
-
1 onion, finely
chopped
-
225 g/8 oz
mushrooms, chopped

Salt and freshly ground black
pepper
-
15 ml/1 tbsp chopped fresh parsley
-
50 g/2 oz/1
cup breadcrumbs
-
4 red mullet,
cleaned and scaled
Method:

Grease a shallow ovenproof dish with a little of the oil. Place the
remaining oil in a frying pan (skillet) and add
the garlic and onion.

Fry (sauté) for 5 minutes
until the onion is translucent. Add the
mushrooms. Season with the salt and pepper and
blend in half of the parsley.

Stir in the
breadcrumbs and continue cooking for 3
minutes. Spoon into the dish and arrange the
red mullet on top.

Cover with greaseproof
(waxed) paper or foil and bake in a preheated
oven for 10 minutes at 180°C/350°F/gas mark 4.

Remove the paper and bake for a further 10
minutes until the fish is cooked through and
tinged with brown. Sprinkle with the remaining
parsley.
