Mussels Tuscany Style (Cozze Alla Tosana)

Ingredients
-
1 small onion
-
450 g/1lb mussels,
scrubbed and beards removed
-
150 ml/2/3 cup
white wine
-
2 sprigs of thyme
-
Salt and freshly
ground black pepper
-
300 ml/1
1/4 cups stock or
water
-
15 ml/1 tbsp oil
-
3 tomatoes, peeled
and chopped
-
30 ml/2 tbsp tomato
puree (paste)
Method:
-
Chop the onion and place in a large pan with the
mussels, wine, thyme, salt and pepper and stock
or water.

Cover and heat rapidly until the
mussels open. Drain the mussels reserving the
liquid.

Remove the mussels from their shells.
Discard any unopened ones.

Heat the oil in a
pan, add the tomatoes and simmer until they are
soft.

Add the mussels and simmer for two
minutes. Stir in the tomato puree and serve
immediately.
