Italian Fish Recipes - Potatoes with Prawn Sauce (Patate con Salsa di Gamberetti) Recipe

 

Ingredients 

  • 6 potatoes, sliced

  • 1/2 onion, diced

  • 25g/2 tbsp unsalted (sweet) butter

  • 225g/8 oz cooked peeled prawn (shrimp), chopped

  • 30ml/2 tbsp dry sherry

  • 250ml/1 cup single (light) cream

  • salt and freshly ground black pepper         


Method:

  1. Boil the potatoes in slated water for 4 minutes. Drain. Fry the onion in 15g/1 tbsp butter and add the prawns and sherry.

  2. Fry for 5 minutes and mix in the cream. Continue cooking for 1 minute.

  3. Lay the potatoes in a large dish, dot with the remaining butter and pour over the prawn sauce.

  4. Season with the salt and pepper. Bake in preheated oven at 180C/350F/gar mark 4 for 25 minutes until golden and cooked through.
