Potatoes with Prawn Sauce (Patate con Salsa di
Gamberetti)

Ingredients

6 potatoes, sliced
-
1/2 onion, diced
-
25g/2 tbsp unsalted (sweet)
butter

225g/8 oz cooked peeled
prawn (shrimp), chopped

30ml/2 tbsp dry sherry
-
250ml/1 cup single (light)
cream
-
salt and freshly ground
black pepper
Method:

Boil the potatoes in slated water for 4 minutes.
Drain. Fry the onion in 15g/1 tbsp butter and
add the prawns and sherry.

Fry for 5 minutes and mix in the cream. Continue
cooking for 1 minute.

Lay the potatoes in a large dish, dot with the
remaining butter and pour over the prawn sauce.

Season with the salt and pepper. Bake in
preheated oven at 180C/350F/gar mark 4 for 25
minutes until golden and cooked through.
