Prawn and Mozzarella Fritters (Fritelle di Gambereti e
Mozzarella)

Ingredients

120 ml/4 fl oz/1/2 cup water
-
50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
2.5 ml/1/2 tsp salt
-
1.5 ml/1/4 tsp
freshly ground black pepper
-
5 ml/1 tsp chopped
fresh basil
-
75 g/3 oz/3/4 cup
plain (all-purpose) flour
-
2 eggs
-
100 g/4 oz
(preferably raw) peeled prawns (shrimp),
chopped

100 g/4 oz/1 cup
Mozzarella cheese, grated

Oil for deep-frying
Method:
-
Bring the water to
the boil and add the butter, salt, pepper and
basil.

Remove from the heat when the butter has
melted and beat in the flour. Continue beating
until the mixture comes away from the sides of
the pan.

Beat in the eggs, one at a time and
fold in the prawns and Mozzarella. Allow to cool
for 10 minutes.

Deep-fry teaspoons of the
mixture in hot oil for 3-4 minutes until golden
brown.

Remove from the pan with a draining spoon
and drain on kitchen paper.

Keep warm while the
rest of the fritters are cooking. Serve hot.
