Red Mullet Baked in Paper (Triglie Nella Papillote)

Ingredients

175 g/6 oz mushrooms
-
4
red mullet,
cleaned and scaled
-
50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
Salt
-
Cayenne
-
30 ml/2 tbsp lemon
juice
-
4 sprigs of fresh
rosemary
Method:
-
Slice the mushrooms and place on a large piece of greaseproof (waxed)
paper on a baking sheet.

Place the cleaned
mullet in a single layer on the mushrooms. Dot
with pieces of the butter and sprinkle with the
salt and a dash of cayenne.

Sprinkle over the
lemon juice. Place a sprig of fresh rosemary on
top of each mullet.

Fold the paper over the fish
and twist and fold the edges to seal.

Bake in a
preheated oven at 190°C/375°F/gas mark 5 for 20
minutes. Remove the fish from the parcel and
place on a warmed plate.

Pour the sauce from the
paper over the fish and garnish if desired.
