Italian Fish Recipes - Red Mullet Baked in Paper (Triglie Nella Papillote) Recipe

 

Ingredients             

  • 175 g/6 oz mushrooms

  • 4 red mullet, cleaned and scaled

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • Salt

  • Cayenne

  • 30 ml/2 tbsp lemon juice

  • 4 sprigs of fresh rosemary


Method:

  1. Slice the mushrooms and place on a large piece of greaseproof (waxed) paper on a baking sheet.

  2. Place the cleaned mullet in a single layer on the mushrooms. Dot with pieces of the butter and sprinkle with the salt and a dash of cayenne.

  3. Sprinkle over the lemon juice. Place a sprig of fresh rosemary on top of each mullet.

  4. Fold the paper over the fish and twist and fold the edges to seal.

  5. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 20 minutes. Remove the fish from the parcel and place on a warmed plate.

  6. Pour the sauce from the paper over the fish and garnish if desired.
