Italian Fish Recipes - Red Mullet Leghorn Style (Triglie all Livornese) Recipe

 

Ingredients  

  • 4 red mullet, cleaned and scaled

  • 150ml/2/3 cup white wine

  • 600ml/2 1/2 cups water

  • 3 springs of thyme

  • salt and freshly ground black pepper

  • 15ml/1 tbsp oil

  • 2 large onions, chopped

  • 3 egg yolks

  • 30ml/2 tbsp single (light) cream

  • 1 garlic clove, crushed

  • 5ml/1 tsp chopped fresh parsley           


Method:

  1. Put the cleaned fish in a pan with the wine, water and thyme. Season with the salt and pepper and poach gently for 10 minutes.

  2. Drain the fish and reserve the liquid. Set aside. Heat the oil in a saucepan and cook the onions until brown.

  3. Strain in half the fish stock and boil very fast to reduce the quantity. Remove from the heat and allow to cool.

  4. Place the fish on a large platter. Whisk the egg yolks into the sauce and blend in the cream and crushed garlic.

  5. Pour over the fish, sprinkle with chopped parsley and serve immediately.
