Italian Fish Recipes - Red Mullet and Tomatoes (Triglie e Pomodori) Recipe

 

Ingredients             

  • 45 ml/3 tbsp olive oil

  • 30 ml/2 tbsp chopped fresh fennel fronds or dill (dill weed)

  • 6 small red mullet, cleaned and scaled

  • 1 bay leaf

  • Salt and freshly ground black pepper

  • 6 tomatoes, cut into wedges


Method:

  1. Blend the oil and fennel. Place the fish in a large dish and pour over the oil.

  2. Season with the bay leaf and salt and pepper. Allow to marinate for 1 hour.

  3. Lift the fish out of the marinade and grill (broil) for about 6 minutes on each side, depending on the size of the fish.

  4. Baste once or twice while grilling with the marinade. Add the tomato wedges to the grill (broiler) pan for the last minute of cooking. Serve at once.
