Italian Fish Recipes - Roast Sea Bass (Spigola Arrosto alla Brace) Recipe

 

Ingredients

  • 2 x 750-900 g/1 1/2-2 lb sea bass, cleaned

  • 45 ml/3 tbsp olive oil

  • 60 ml/4 tbsp water

  • Salt and freshly ground black pepper

  • 1 garlic clove, chopped

  • 1 sprig of fresh rosemary, chopped

  • 2 sprigs of fresh thyme, chopped

  • Lemon juice

  • 6 slices of lemon, to garnish


Method:

  1. Brush each sea bass with a little oil and place in a large roasting tin (pan).

  2. Cook in a preheated oven at 180°C/350°F/gas mark 4 for 30 minutes or until cooked through.

  3. Meanwhile, prepare the dressing. Mix the water, salt, pepper, garlic and remaining oil together in a small pan and add the herbs.

  4. Spike with lemon juice and bring to the boil. Arrange the fish on a serving dish and pour the dressing over. Serve garnished with lemon slices.
