Roast Sea Bass (Spigola Arrosto alla Brace)

Ingredients

2 x 750-900
g/1 1/2-2 lb sea bass, cleaned
-
45 ml/3 tbsp olive
oil
-
60 ml/4 tbsp water
-
Salt and freshly
ground black pepper
-
1 garlic clove, chopped
-
1 sprig of fresh
rosemary, chopped
-
2 sprigs of fresh
thyme, chopped
-
Lemon juice
-
6 slices of lemon,
to garnish
Method:
-
Brush each sea bass with a little oil and place
in a large roasting tin (pan).

Cook in a
preheated oven at 180°C/350°F/gas mark 4 for 30
minutes or until cooked through.

Meanwhile,
prepare the dressing. Mix the water, salt,
pepper, garlic and remaining oil together in a
small pan and add the herbs.
-
Spike with lemon
juice and bring to the boil. Arrange the fish on
a serving dish and pour the dressing over. Serve
garnished with lemon slices.
