Ingredients

450 g/1lb salt cod
-
15 ml/1 tbsp olive
oil
-
4 tomatoes
-
50 g/2 oz/1 small
can anchovies
-
Small bunch of fresh, mixed herbs
-
150 ml/2/3 cup white wine
-
15 ml/1 tbsp brandy
Method:
-
Soak the cod in cold water for 24 hours,
changing. the water several times.
-
Drain well, cut the cod into slices and fry (sauté) in the
oil for 2 minutes on each side.

Chop the
tomatoes and add to the pan with the anchovies,
herbs and wine.
-
Simmer for 15 minutes. Remove
the herbs and stir in the brandy.
