Italian Fish Recipes - Salt Cod (Baccala) Recipe

 

Ingredients             

  • 450 g/1lb salt cod

  • 15 ml/1 tbsp olive oil

  • 4 tomatoes

  • 50 g/2 oz/1 small can anchovies

  • Small bunch of fresh, mixed herbs

  • 150 ml/2/3 cup white wine

  • 15 ml/1 tbsp brandy


Method:

  1. Soak the cod in cold water for 24 hours, changing. the water several times.

  2. Drain well, cut the cod into slices and fry (sauté) in the oil for 2 minutes on each side.

  3. Chop the tomatoes and add to the pan with the anchovies, herbs and wine.

  4. Simmer for 15 minutes. Remove the herbs and stir in the brandy.
